Chunky Guacamole

This is my recipe for a chunky guacamole. I primarily prepare this as a dip or side for parties.

This is a recipe tailored to serve groups of 8+ and to be accompanied with corn chips or sliced carrots / celery. Adjust for your needs.

Ingredients:

  • 4 avocados (ripe)
  • 4 – 6 garlic cloves depending on your taste
  • 1 tomato
  • 1/2 red onion
  • 2 tbsp lime juice
  • Coriander depending on your taste
  • 1 jalapeno pepper
  • 2 tsp salt

Tools / Equipment:

  • Knife for chopping
  • Large bowl
  • Potato masher (preferably metal)

Recipe:

  • Peel and dice avocados
  • Chop garlic finely
  • Dice tomatoes
  • Dice red onion
  • Chop coriander
  • De-seed and chop jalapeno pepper
  • Place all ingredients into a large bowl
  • Mash and mix ingredients together using potato masher until you reach desired consistency
  • Serve with dipping food of choice or as a side

Chilli con Carne

This is my recipe for a meal-prep of chilli con carne. I primarily prepare this for lunch when on a slow/low-carb diet.

This is a meal-prep recipe which produces approximately 7 servings. Adjust for your needs.

Ingredients:

  • 1kg lean minced grass-fed beef
  • 2 cans of Red Kidney Beans (no added salt) approx. 400g each
  • 2 cans of diced or crushed tomatoes approx. 400g each
  • 1/2 cup Cholula Hot Sauce
  • 2 – 4 medium onions depending on your taste for onions
  • 4 – 8 gloves of garlic depending on your taste for onions
  • 4tbsp macadamia oil (or olive oil)
  • 300ml water

Tools / Equipment:

  • Large pot
  • Knife for chopping
  • Strainer
  • Utensil for mixing ingredients in the pot

Recipe:

  • Chop onions and garlic
  • Drain Red Kidney Beans
  • Heat macadamia oil on medium in large pot
  • Add onions and cook for 3 to 5 mins until onions are translucent
  • Add garlic and cook for 3 to 5 mins
  • Add beef. Continue to mix and cook beef until browned evenly
  • Add 300ml water
  • Add tomatoes
  • Add hot sauce
  • Bring to boil, then turn to low and simmer for 20 minutes. Stir intermittently
  • Add Red Kidney Beans
  • Bring to boil, then turn to low and simmer for 10 minutes. Stir intermittently
  • Stir and then cool before packing into meal-prep containers

Scrambled Eggs with Spinach and Lentils

This is my recipe for a meal-prep of scrambled eggs with spinach and lentils. I primarily prepare this for breakfast when on a slow/low-carb diet.

This is a meal-prep recipe which produces approximately 6 servings. Adjust for your needs.

Ingredients:

  • 1 can Lentils (no added salt) approx. 420g
  • 18 eggs (whisked) or 1l egg whites
  • 500g spinach
  • 2tbs macadamia oil (or olive oil)

Tools / Equipment:

  • Large pan
  • Large bowl for whisked eggs
  • Strainer
  • Utensil for scrambling eggs and mixing ingredients

Recipe:

  • Heat macadamia oil on medium in large pan
  • Place whisked eggs or egg whites into large pan
  • Scramble eggs on medium heat
    Note: you will need to continually stir and scramble the eggs over a 10 to 15 minute period and aim to prevent it sticking to the pan. The more eggs / egg whites you use, the harder and longer this process is
  • Drain lentils
  • Once eggs are sufficiently scrambled turn heat to low and then add in spinach and lentils
  • Mix and then cool before packing in meal-prep containers

Black Bean Salsa

This is my recipe for a simple black bean salsa. I primarily use this as a side.

This is a meal-prep recipe and usually lasts me about 1 to 2 weeks. Adjust for your needs.

Ingredients:

  • 1 can Black Beans (no added salt) approx. 420g
  • 1 can diced or crushed tomatoes approx. 400g
  • 1/2 a red onion approx. 100g
  • Coriander (amount per your taste)
  • 60ml lime juice

Tools / Equipment:

  • Large mixing bowl
  • Knife for chopping
  • Strainer
  • Large spoon

Recipe:

  • Chop onions
  • Chop coriander
  • Drain black beans
  • Place all ingredients into a bowl and mix together with a large spoon
